High-quality products are essential for every chef, whether with a hood or without. That’s why we know our suppliers personally and know where the ingredients for our dishes come from: namely from our region. Depending on the season, we let nature surprise us with what it has in store for us, and from this, we create – sometimes at short notice – our delicious dishes for your dinner.

Restaurant Manager Katharina Proyer coordinates the service team with great experience and a fine sense for detail. She makes sure everything runs smoothly – or, as we like to say in Vienna, that “the Werkl is running.” Whether it’s a wine recommendation, homemade lemonade, or a signature cocktail – together with her team, she ensures that every visit becomes a truly delightful experience.

Matthias Hausburg

Our Matthias has been the head chef of Labstelle since 2022, and since then, he has been leading our kitchen team alongside his sous chef, Theo. His passion for creative and innovative dishes is reflected not only on the plate but has also been recognized with the 2-toque rating from Gault Millau and the “Top Chef” award from Rolling Pin. Matthias knows how to lead, delegate, and motivate his team. It’s a pleasure to watch him and the entire kitchen team at work every day. You can feel their love for the products in every step they take. You can see this for yourself during your next visit to Labstelle!

Since Zeljko returned, he’s more motivated than ever – and it shows in every corner of Labstelle. As Operations & Team Manager, he’s responsible for all aspects of our daily operations, making sure everything runs smoothly – and most importantly, that no one gets left behind.
Whether it’s our guests, producers, or team members: personal connection is what matters most to him.

Kathi is back – and we couldn’t be happier! With her positive spirit and infectious smile, she brings new energy to our bar and makes every guest feel instantly welcome.

With plenty of experience and a fine sense for flavor, she takes care of our homemade lemonades, refreshing drinks, and selected beverages. Kathi values quality, care, and warm hospitality – making her once again an essential part of our team.

Flo is our sous-chef and also in charge of the dining area – a true all-round talent with a passion for perfection and great taste.
He stands for a creative culinary style that constantly brings new flavor compositions to the plate while staying true to tradition.

With his calm manner and keen eye for detail, Flo ensures that kitchen and service work seamlessly together – so every dish not only tastes exceptional but also looks the part.

From Greece straight to the Labstelle – well, almost.
After several kitchen positions in Vienna, Theo joined the Labstelle eight years ago and has since become a true mainstay as our sous-chef.

With his Mediterranean passion and creativity, he brings invaluable culinary expertise to our team. His dishes have become a beloved part of our menu and continue to delight our guests time and time again.

We’re proud to have Theo on our team – and we look forward to many more years of his vibrant and soulful cuisine!
